New Negresco Nice pastry chef

Fabrice Didier takes charge of all things sweet in the hotel kitchen

After four years as second chef to Fabien Cocheteux, Fabrice Didier now takes the reigns as head pastry chef at the Le Chantecler Restaurant in Hotel Negresco in Nice.

A veteran professional Didier began his career at the Hotel du Cap Eden Roc and then spent time at Guy Martin's 2 Michelin starred restaurant Le Grand Véfour, where he learned and acquired many of his skills. His signature dishes will undoubtedly include strawberry, chocolate, honey and citrus in some form or other, as he manages their subtleties to produce mouth water delights.
