Nice is well known as an international conference location, so there are plenty of hotels to accommodate these delegates. Boutique hotels and guest houses make up a smaller section of the market than you might anticipate, so try to book in advanced for these more unique options. Wonderful rural hotels are also on offer in the hills north of Nice in villages such as St Paul de Vence.
